Blueberry Goddess Breakfast Loaf...

Heres the deal, IM IN LOVE WITH BAKED GOODS ! , Yes, in a relationship with them :)


Although traditional baked goods are made with all the wrong stuff ! So its my job as a Nutritionist - to help recreate the recipe so its healthy for our hormones, and our bodies !

Ingredients:


1 and 1/2 cups blanched almond flour

1/4 cup coconut flour, sifted (I use THIS brand)

1 teaspoon baking soda

1/4 teaspoon salt

4 eggs

splash of almond milk if its needs more moisture

1/2 cup coconut oil or ghee,

1/3 cup monk fruit or 1 cup apple sauce

3 Tablespoon lemon juicezest from 2 lemons1

1/2 cups fresh blueberries


Directions

Preheat oven to 350 F. 

Grease a loaf pan and cut a piece of parchment paper to line the bottom of the pan.

Combine almond flour, coconut flour, baking soda, and salt in a large bowl. 

Set aside.

Whisk together eggs, coconut oil, monk fruit/ as, lemon juice, and lemon zest.

Add wet ingredients to dry and mix until well incorporated.

 Bake 32-37 minutes until a toothpick inserted into the center comes out clean. 

Cover with foil if top begins to brown too much.  Remove from oven and allow to cool.
